Dear Brethren,

I dunno when I'm actually gonna throw this one on the grill, but starting early to get some buy in for the HOT AND SPICY CHICKEN TD!.

I'm starting with this:

Took some boneless chicken thighs and thinned them out as this is going on a flat top for a fast grill.

Let's see now. A bit of EVOO and lets say a whole TBS of HDD for 4 chicken thighs...

And then some of Dave's Insanity Hot Sauce... Ghost Pepper.

Dabbed my finger in that whole TBS. Put it on my tongue. Woooooo. Not totally insane but really hot. A solid 9 out of 10 on my personal "Hotometer". My guts got warm in 3 seconds.

And because of this I thought I'd break out some Chipotle in Adobo for balance.

Mixed that up, and then it's in the fridge until i decide what to do with it. That is if it doesn't eat through the plastic.

I love spicy food, but Dave’s insanity and other super hot extracts don’t taste good to me.

Hope you put a roll of toilet paper in the freezer just in case!

Did one like that a few years back for a TD and literally foamed at the mouth due to the excessive heat. :laugh:

Finally got it together last night and it was worth the wait.

I thought I might spice up some Guacamole.

Started with this:

Added some hot fresh chopped Thai chillies this and made it creamy and chunky.

On the flat top, grilled the Onions and Peppers with some chilli and garlic EVOO and some hot sauce:

Here's the rest of the crew. You'll notice 2 further chief offendors. Some hot Salsa and more Dave's Insanity Sauce!

Some careful flat top management with browning the chicken and just warming the onions and peppers.

It was well worth doing. I got a further batch for dinner tonight.

Yes, It was hot, but not crazy. All about balance with the Sour Cream and the Guacamole.
