I've seen many Tri Tip cooks on here over the years, but never see Tri Tip in my area. I had to hit up a meat market I only go to once a year, to get some things for Easter, and sure enough they had Tri Tip for $5.99/lb. Ended up getting a 15 lb cryovac pack that contained 5 Tri Tips. Three looked like what I usually see here, and the other two were a little more "stubby". Not sure if it was how it was trimmed or what... The place I got them from is not known for great meat IMO, more for a good price...

Anyways, I took off a 1/4'" layer of fat that was on one side of each Tri Tip. Seasoned one with SPG and the other with a Santa Maria/Carne Crosta combo. Cooked low on the Weber 26 with a few Mesquite chunks, then seared on the Weber Performer until done. Overall I was happy with the result. We really enjoyed the flavor of both Tri Tips. Good beefy flavor and both seasonings went well with the Tri Tips. I "may" have sliced them incorrectly, as they had a little more chew than I expected. I know I'm supposed to go against the grain, but had a few mixes while cooking, so...

How long did you have them on the smoker? I did a few that were closer to 4lbs each this weekend and was surprised that they hit 120 IT in just over an hour in a 275 degree smoker.
 
Excellent looking cook, especially for your first attempt. That is definitely on my short list of things to do. Nice job!

Well... I did mention I consumed a few mixes so, lol...

I'd estimate it was just under an hour. They were around 2.5 lbs and in the 115 range when I seared.
