Nothing better than a quick work week tri-tip on the Weber! This has become my favorite steak, when available. Sprinkled with Tatonka Dust and reverse seared over the Vortex to 130* with a 10 minute paper plate tent rest.

Accompanied with a Caprese salad, char grilled romaine seasoned with Cattleman's 8 Second Ride & a drizzle of Italian dressing. Add a few slices of 3-cheese bread and I barely made it to the easy chair...

What's on the potatoes? Sour cream?
Everything looks delicious.

I think the "potatoes" are actually the Caprese Salad...layers of tomatoes and mozzarella, with basil leaf between each slice, drizzled with the salad with balsamic vinegar & virgin olive oil and season with salt and pepper, to taste.

It is very good...
 
Thanks everyone for the nice comments! Best part of Tri-Tip is the cold med-rare slices for tomorrow's lunch.
 
Great looking dinner Mike. I love me some Tri-Tip and you cooked that perfectly. And yes, the best part is the leftovers, but that plate looks pretty delicious too....
