You got some nice color on that! Be sure and jot down some notes because going forward it will be the little tweaks to your technique that will make your bacon better and better.

For example, longer resting time before smoking, and longer blooming and mellowing time after smoking will make a difference in flavor. And when winter finally comes, cold smoking can change the flavor.

I purposefully did this as basic as possible to kind of act as a control of sorts, but I really should write my process down.
