This was a very fun cook and we enjoyed cooking something we have never seen or cooked before. I’m very fortunate to know a few local gentlemen that grow gourmet exotic mushrooms. They were kind enough to give me some Lion Mane and I thought this would make a great TD entry.

NY Strip seasoned with local Texas blends then cooked to 145. Rested with butter and rosemary.

TX Smothered Taters.. cut to 1/2 inch and pan fried to golden brown. Added a touch of water and cover till tender. Seasoned with homemade smoked season salt.

Lion Mane Steak.. brushed away any substrate and made sure it’s clean. Decided to cook it on the Blackstone over med high heat. Pressed until all the water came out of the mushroom. Added clarified butter, rosemary, thyme and garlic. Covered for 5 mins…. The smell was amazing.

Plated with English Toast and avocado.

If you get a chance to get some lion mane it taste like crab/lobster.

had the texture of lobster

Lion Mane is known for its health benefits too

Protects against dementia
Relieves mid depression
Reduces heart disease
Reduces inflammation
And on and on….
