I recently purchased a Lang '48 and have cooked on it ~10x at this point. Here is what I have noticed and if anyone else has noticed the same and it just kind of "is-what-it-is" then that's the answer but if there are any tips on getting a more consistent temp across it would be great.
Smoker is parallel to the ground, fire in firebox close to door with box door shut and pinwheels wide open.
If I have 275 on the left bottom grate (firebox on right) I will show 290 in dead center bottom and 310 about 6 inches from right end of grate on bottom. Top rack is 80-100 degrees higher at each point.
Any suggestions on getting more consistent across would be great.
