OK, Brethren,

So, here's what I'm thinking for my Italian night recipe that I queried about last weekend...

Italian ABTs

Ingredients:
Jalapenos (of course)
12 oz whipped Cream cheese
"Parmesan mix" (Parmesan, Asiago, Romano, Fontina)
Baby Basil
Capocollo (not sure if I will quickly sear it before rolling it for the ABTs)
Dark Brown Sugar
Bacon
Yardbird Rub

Preparation:
1. Prepare Jalepenos (halved, deseeded, deveined).
2. Mix cream cheese, some Yardbird rub (don't have an exact amount - I just eyeball it), chopped baby basil, and the Parmesan cheese mix.
3. Put down a bead of the cheese mix.
4. Lightly sprinkle dark brown sugar on top of the cheese-filled Jalepeno.
5. Roll capocollo and lightly press down into cheese.
6. Wrap with a 1/2 piece of bacon.
7. Lightly dust with Yardbird.

Cooking:
Smoke until bacon gets to your desired doneness (usually about 1 1/2 hours)

What do you think? This is for next Saturday, so I will post pictures then, but I wanted to run the recipe and procedure by the experts on this list.
 
That sounds good. I just did a bunch with cream cheese,shrimp,crab meat,Todds Dirt and a little parm cheese smoked for a while then took them off and wrapped in smoked salmon with Old Bay seasoning for a dry rub. Put back on for another 20 minutes they were FANTASTIC!!
 
Did you do them yet? I want to see pics of these when they are done.
