Done deal. Rec Tec 590 Stampede has been ordered and paid for.

And now we play the waiting game.

Decision explained.

I know I would probably regret the smaller cooker. Every time I would buy a brisket wondering if it would fit would get old. Also concerned about airflow with larger cuts. Also space on the 340 would be limited to 2 racks of St Louis spares. Most of the time not an issue but I don’t want to spend $600 and regret not kicking in $300 more to get exactly what I want.

The only downside is I lose both stainless shelves on the Primo cart. Not optimum but probably not a huge problem.

Rule of thumb? When in doubt, opt for more capacity. At least that is how I see it

Okay so how long do you think I will have to wait now?
