Hey all,

Here's the menu for last night, boy did it come out good!

Cornish Game Hen Stuffed with a Brown Rice, Quinoa, Mushroom and Sage Sausage stuffing.

Grill Roasted Potatoes and Carrots.

Steamed Broccoli

Tomato and Green Bean Salad

Peach Crisp for dessert

Started with the following;

First, I put the stuffing together;

Then put together the roasted "roots";

Coated with olive oil and SM Season All;

Used my new toy for these, and onto the grill while I stuffed the hen;

I let these cook for about 20 minutes before tossing on the bird;

While this was cooking I prepped the peach crisp;

I didn't really watch the time, I just cooked the bird and stuffing to an IT of 160, about an hour and 15 minutes or so at 325-350;

I meant to make an apple crisp last weekend but those peaches look so perfect.

Actually a little intrigued by your tomato/beans/cucumbers dish, did you just toss them in something?

Got this off the internet somewhere, simple but good.

I TBSP Dijon mustard
2 TBSP Olive oil
1 TBSP Apple cider vinegar
1 Tsp salt
Pinch of fresh ground pepper

I just blanch the green beans for a few minutes in boiling water first, then into ice water to keep the color. Mix in the dressing just before serving. The nice thing about the salad, is you can modify it any way you like, sometimes I add chunks of red, green, and/or yellow peppers, slices of zucchini, radishes or anything else you like.

That looks amazing How long did you cook the veggies for

The taters and carrots were on for around 1.5 hours with cook temps 275-325. The carrots probably could have been sliced a little thinner, they were still pretty firm. I figured the potatoes and carrots would take about the same time to cook, close, but the carrots could have cooked a little more. The broccoli I steamed on the stove.

Was that on your kettle?

I prepped the stuffing and steamed the broccoli on the stove, the rest of the cook was on my 22" Weber kettle.

Looks good. Did you brine the bird? I've never had much luck with stuffed poultry getting the meat not to be overdone and getting the inside/stuffing to temp.

No brine. I put the stuffing in the hen just before seasoning and placing on the kettle, it had cooled to room temp by that point, so it came back up to temp pretty rapidly,the chicken was very moist and delicious. Now with a full sized chicken, that may have been a different story, but this was a 1.5 pound game hen, so cooked quite quickly.
