Hey folks,
I was pleased with the results so I thought I should share what I did.
I toweled the wings dry and allowed to sit uncovered in fridge for a couple hours. Then I coated them w/ Famous Dave's Devil Spit seasoning. Back into the fridge for 6 more hours uncovered. Another light coat of Devil Spit before going onto grill.
I put the Vortex in the weber filled w/ Kingsford blue. Got it screaming hot and placed a mini split of peach over top for added heat and smoke.
Flippity flip flip. About half way in I sprayed them w/ duck fat to help them crisp. Once well crisped and nearly done, I painted w/ Franks Red Hot Wing Sauce. Flipped and recoated a couple times till firm glaze was crisped.
Served w/ home made Blue Cheese sauce and various sliced veggies.
Nice crisp, smokey heat.
