Smoked some beef chuck ribs yesterday on my Big Green Egg and I got a laugh when I opened the Egg to check them near the end of the cook - as the meat pulled back it pushed two of the ribs the opposite direction of the other two. This is only my 2nd time cooking these, so I'm not sure if this is normal or not, but I've never seen pics like this.
Seasoned with Dizzy Pig Red Eye Express, smoked for 6.5hrs between 230-250 until the last hour when I kicked up the temp to finish them so we could eat before it got late.
