First Attempt at Chicken Thighs on the YS480

Decided to do some chicken thighs for my eldest daughter. Got a couple of packs of air chilled wings because they have less moisture and the skins cook better for me than the generic frozen ones.

Liberally rubbed them with Kinder's Lemon Pepper mix and put them on the smoker at 275. Used a mix of pecan and fruitwood pellets to keep things relatively mild.

While I was smoking them up to about 155-160 internal, I took a small bowl of Blues Hog Original and cut it with apple cider vinegar to make a spreadable glaze.

Glazed the thighs, bumped the smoker up to 450, and then used the grill grates to do a little pseudo reverse sear on them and finish cooking the skin so it wasn't chewy.

End result was very moist with great flavor and bite through skin. Will definitely be doing it again...
