Firing up the new Rig

I got the new Catering Rig home on Saturday and proceeded to light a fire and see how she did. Stacked a few splits and turned on the gas to get it going and after about 30 minutes had some nice coals going and it was starting to come up to temp.

We had a few friends coming over so twisted up a fatty with sausage, jalapeno jack cheese, boudin, and a locally made andouille sausage.

Threw on a couple racks of pork ribs and some beef ribs that were in the freezer.

A few links of venison sausage and boudin went on for snacking while we maintained the fire.

Not a bad first run, just trying to see how it's going to cook. Klose builds one heck of a pit. For such a large pit it held temp really well just throwing on a couple splits an hour.

I threw on a pork butt a little later in the evening to have for Sunday. I'll have to follow with pics of it.
 
Holy cow! Dave Klose is a great guy who builds great pits. If anyone is ever in the Houston area, go by for a visit. Amazing place and you will be treated like family.
