I've been looking for a butcher knife for a while. I wanted something carbon steel and inexpensive.. My Japanese knives are great, but when I'm cutting up chickens or prepping butts for sausage, I get paranoid of chipping the blades on bone. I finally saw this beauty on eBay and jumped on it. Old hickory, 10" blade, decent handle. And the patina is pretty sweet too. And only 20$ with free shipping!







First thing I did was to sand and shape the handle. Then I drizzled about a half a tube of super glue down between the tang and wood and clamped it tight. Really helped tighten it up. Then I oiled it with mineral oil/beeswax. Gave it 6 coats (till it stopped soaking it up)






That was last night. Tonight I spent about 40 minutes with my whetstone putting a deadly edge on it. Ready for business! Now I need something to butcher....

Yea, I know. I was really looking for an older model. Anything older than a couple years was running 25-35 and an extra 5 for shipping at cheapest. And most those were rusty and had chipped blades. This was a few weeks of searching to find what I really wanted.

Mine is the same one. It was new in 1986. Still works great. Nothing like carbon steel for getting a sharp edge. Congrats on a good ending to your search!
 
I own several I managed to salvage from the floor of my parents garage. Older ones without the ribbed blades. My favorite knives.
