Dr. Chicken’s Double Smoked Ham

I went for the buy a ham, get a turkey for “free” deal at the local grocer last month. I’ve been curious about the sweet kiss of death injection and instant coffee glaze so here it is. Spent about 4 hours in the Pit Boss with Apple pellets at 250. I glazed once it reached 120 and again at 130.

Turned out great, kids could pick out the different extract flavors we injected it with. My wife’s not sure it’s worth all the mess of my late night injection mishaps (shoots right back out the hole!)

That looks great! I like the idea of searing the pineapple separately so it gets a nice color
