Better yet, stuff with lard instead of cheese.
 
I did these before, and I used a raised stainless rack my wife had in the cabinet, it was round with holes in it, dont know what it was used for. I cut the top of poblano peppers and stuffed venison, pork, italian suasage, spices, and jack cheese. Stood them up in the rack and smoked them. right at the end I put a mixture of asiago and motzarella garlic cheese on top and let it melt, they looked like little ice cream cones. They was damn good!!!! We always called them armadillo eggs.
 
For some strange reason, I call them stuffed poblano's.
