I've never ordered from Creekstone, but eventually, I'd like to try one of their briskets. Given the price, do their briskets require a lot of trimming? I'm okay with paying to try a high end product, but am curious if I'm going to trim 8 lbs of fat off a $140/piece of meat.

I've only cooked a couple of them and didn't weigh my trimmings. Overall I thought they needed less trimming than the briskets I typically cook, but they absolutely needed some trimming. The fat caps on them didn't need as much trimming.
