Iam, curious,

Was the shoulder slices "too" brined?

You mention bringing, and the label indicates they were already brined. I assume that means it was a full pork but that didnt sell, then near expiration pulled and sliced into Country Ribs.

So were they, I don't know, hammy?

I'm a big fan of country ribs, I have had a number of shoulder experiences that bordered on ham (my own fault usually)

looks great, and love the loaded tater option.

Actually not salty, over-brined or "hammy" at all. Tender juicy white meat, basted with Yes Dear Competition Sauce.

I have to say the combination of the Oakridge Secret Weapon rub and the Yes Dear Competition really hit a home run for the flavors.

I should have indicated that I used the Game Changer Brine at "half-strength" 1 tsp to a cup of water.

I haven't done it for a few years, decided it might be a nice change for a cold winter day.

Looks very tasty, did you get thru the iso ok

Sorry you folks were in lockdown. Hope all is well. Grub looks excellent!

Everyone is well, my family all had COVID, with flu-like symptoms. They also lost their sense of taste and smell. I had no symptoms and continued to test negative, even after I was quarantined in the same house. They tested me for anti-bodies, but that was negative as well.

That is a whole mess of goodness right there! So happy to hear that everyone is over the Covid thing. No doubt that the way that plate looked, everyone was glad that their taste buds came back.
