Wet brined both the hens and salmon.

Oakridge bbq brine for hens. Added wild game and chicken rub on both hens. Chili lime rub on one game bird. Wife doesn’t enjoy any heat. First time trying Chile lime. Cooked indirect at 375. Seared skin for a minute.

Hit the salmon with salt, sugar and dill for brine. Seasoned with little Louie’s garlic and pepper rub. Added more dill. Smoked at 180-210. Added a little hickory. Out of fruit woods at the moment. Basted with maple syrup and pineapple juice.

Both turned out well. The salmon is a little salty for me. I tried a small piece so maybe the rest will be more mellow. Never cooked Cornish game hen. Pretty easy to work with. Added cauliflower and zucchini to hens. Trying to be healthy.

Beignets made for breakfast in Dutch oven for first time. Won’t be the last time for that.
