Chimichurri marinated Chicken, Potato bake and Pickled Vegies.

Grabbed a Chook and cut it in half, marinated in a Chimmichurrie.

Cut up a selection of Crunchy Vegies,prepared a pickling liquid and in the fridge for about 6 hours.

Pickling Liquid.

2 cup water

1 cup cider vinegar

2 tablespoon honey

zest and juice of ½ lime

2 teaspoons of garlic

some minced ginger

4 teaspoons of Kosher salt
cracked black pepper

1 tablespoon coriander seeds

Bring to boil and simmer,pour over Vegies and into fridge when cool enough.

Made a Potato bake,using Jalapenos and smoked Cheese from king Island

Butter and Garlic in the bottom of the tray.

Not shown ,but 3 cups of milk with 2 eggs beaten in then poured over the Potatoes.

Chicken in the Acorn, potato(spuds) in the oven.

The Pickled Vegies changed the plate taste like you would not believe, great side to cut thru all the protein.

Pickled veggies are awesome and really do a great job of cutting through the rich and savoury/fatty.

I'd surely tear up the lot! Looks delicious.
