Cooked up a pot of chili yesterday using roasted Hatch chilis that I bought from the online store. I use the recipe from Kit Anderson

Modified slightly. I use frozen choped onion and minced garlic because I'm lazy, and add a roasted red bell for some color. Also add a can of those chipolte in adobo sauce and 3 strips of bacon.

The gasser is perfect for roasting peppers. A big red bell and an additional Aneheim:
One pound of frozen chilies was about 10 medium sized. They're a bit mild this year according to the Hatch people.
