Chicken Wings: I make it a standard success!

With a Vortex there is no need to flip them. That's one of the nice benefits. I made mine but its a pretty good clone. I do rotate the lid a quarter turn every 10 to 15 minutes but never have to flip them. Its perfect for reverse sear. You can put whatever you're cooking over the opening of the Vortex at the end of the cook and get a nice quick sear. Wings seem to crisp up nicely without a sear though.
 
Looking good Enrioco. I do wings about twice a week, just cause they're so damn easy and I often work late (or get home from the pub too late :) ). I like to cut the wing tip off and cut the wing into the wingette (the two bone flat piece that's shaped like a skateboard) and the drumette (the one bone piece that connects to the breast and is shaped like a mini chicken leg). Cuts your cooking time in half and is better for finger food. Save the wingtips for chicken stock.

The amount of hot sauce and homemade ranch dressing I consume with them is kind of shameful.

We had some old Homebrew Stainless conical fermenters laying around. I cut the cone off with a grinder. It just happened to be the right size. I used the rest of the tank for a killer charcoal basket for a UDS I made my Dad for xmas.
 
Where did you all buy your Vortex thingy? I'm on their site and this thing looks awesome. I've never heard of it before and this is a must have for my kettle. Looks like there are a handful of different sizes. Ya'll recommend Medium or Small for a 22" kettle?

I got my vortex from http://www.owensbbq.com/vortex.html. I don't remember what size I bought, but I remember being concerned about it and sending them an e-mail to hold up my order until I could talk with them to be sure I got the right size for my 22.5 OTG. I've hunted through emails but cannot find the message, but I'm sure if you give them a call they will give you good advice.

If it helps any, I got the one with an 9.5" diameter so I could use an aluminum pie pan for water and catching drippings. I'm sure that is the smaller diameter.
