Ok! I've already told Y'All what a big hit chicken wings are at my table.
What I was looking for was a standard cooking / smoking roasting process.
Finally I believe I got it.
This is my way:
peanut Oil the wings
rub the wings with BPS Money Rub
Weber 26 OTG with Vortex inside.
1 regular chimney + 1 small chimney with weber briquettes.
1 apple chunck
I fill the vortex with all lit briquettes
Roasting temp reaches immediately 475F at lid gauge (no thermo inside)
Put the wings around the grate in the outer circle.
wait for 50 minutes cooking at 475F.
Remove wings and serve.

super crispy and delicious rub gives a greate taste and All love them.

Those do look great. I make wings at least once a week during football season (gotta blame something). They stay moist cooking them at temp for 50 minutes? If I'm smoking I do mine at 250 for an hour then crisp up on the gasser. I'll have to give these a whirl Thursday I'm thinking.

Sippin on a cold beer and now I want some wings. I hope my store has them on sale tomorrow. Indirect with high heat... man I can taste those.

The Vortex is a Wing cookers dream. They are no gimmick. I love mine and you look like you know how to use yours. Great looking wings!

Where did you all buy your Vortex thingy? I'm on their site and this thing looks awesome. I've never heard of it before and this is a must have for my kettle. Looks like there are a handful of different sizes. Ya'll recommend Medium or Small for a 22" kettle?

First, mine is the 26 OTG.
Second, Vortex is made in bigger and much bigger dimensions in Italy starting from an original Vortex bought in USA.
I am pretty sure You wont fit 1+1(small) chimney in the regular Vortex. But probably You don't need 1+1 chimney to reach 475F
