Cheddar Jalapeño Sausage Recipe?

Looking to try my hand at making some cheddar jalapeno sausage to smoke up for the first time and was wondering if anyone has any amazing recipes that might want to share?

I use Sausage Maker bratwurst seasoning mix, then I add de-seeded fire roasted jalapenos and roasted garlic to the mix (eyeballing the amount to get the mix how I want - usually ~10 large jalapenos for a 5lb batch) then add high temp cheddar cheese per the manufacturer's mixing instructions. Always turns out pretty tasty.

As long as your Fat, Salt, Binder and Liquid ratios are correct sausage is a blank canvas to adjust to the flavors you prefer

not too many servers are case-sensitive anymore, but apparently his is.

I have been making this style of sausage with roasted Hatch peppers, I never trust real garlic, due to not knowing how strong it is, I usually just use a good brand of garlic powder.
