Leaving the avocado pit in with the diced guac helps with discoloration until you're ready to mix and after being processed.

One kitchen gadget I don't have it a really nice electric slicer. Always looking out for a good used deal. But thick or thing works for me on the pastrami. Thanks!
 
That looks SO amazing. How much heat comes across?

The 1 tsp I added to the 3 gallons is actually not bad. Oddly last time it was hotter. You could achieve similar by adding more of something not as hot. Sometimes when I rub I will also add a little to it. That is really where it is easy to over do it :becky:
