Much ado about nothing and likely saves them some $$$ on fabrication. My LSG has a slide out lower shelf but the only reason I don't use it during cooks is I hate grease dripping on the concrete. Sure is nice to be able to slide when & if needed without unloading the rack. Not hatin' - just statin'...........
 
I consider being unable to slide out lower grates to be an inconvenience on my El Rey Smoker, and a result of how they fab the door. I did not think of if as a benefit to brisket but why not? …make wrinkles, advertise ‘em as creases…

But my top grate slides out, all the way. But there was this one time, with a load of chicken wings, I wish it didn’t!
