Yeah that's what everyone is talking about when it comes to brisket. Nice cook there.

whats with the Charcoal in the tray?

I removed water from the disposable drip pan in the lower rack.
But w/o anything the falling grease made an off flavour wich could involve the meat.
So I put a thin layer of ash and used charcoal and over that some papar towel.
No more off flavour.
