Brisket in Roma (1)

Yeah that's what everyone is talking about when it comes to brisket. Nice cook there.

That looks very tasty, your showing how to cook Brisket.
whats with the Charcoal in the tray?

I removed water from the disposable drip pan in the lower rack.
But w/o anything the falling grease made an off flavour wich could involve the meat.
So I put a thin layer of ash and used charcoal and over that some papar towel.
No more off flavour.

Wow. That's a killer brisket, Enrico.

Hope you and your guests thoroughly enjoyed it.

I knew Italy was known for beautiful women but briskets too? Learn something new every day.

Makes me go hmmmm? Something new to try...thanks for sharing the tip.

That looks fabulous! I bet all your neighbors are quite jealous when you're cooking. And wondering where all the good smells are coming from.

Great idea with the ash/paper towel trick and (of course) it came out looking beautiful! You must be famous in Roma by now!
