Looks fantastic! Every time I cook a packer, I look at the pile of trimmings and shed a tear:cry: I live well out in the country, so put the trimmings near the trash burn barrel and the local Possums have a feast. Even have a Coyote or two brave enough to sneak in for a bite.
I often put a trail camera out just to see what shows up

I cut my trimmings into cubes, put in a pan on med. heat and render the tallow. It is the best for frying anything. I usually get about a pint of tallow per brisket. Unless you just want to use it for opposum or coyote bait?
 
Looks perfect and thanks for the inspiration! I'm cooking 5@15 choice packers (75# total) on Tuesday for a cattlemen's dinner (it ain't like I can cook chicken or butts):becky:
