Ever since I saw that last plate you cooked, Bob, I've been on the hunt for these. Took me 7 butcher shops and 4 grocery stores before I found them. I can't believe how few butchers actually carve from a side of beef anymore. On the bright side, it sounds like these guys will cut me whatever I want.

Those ribs look delicious and lovely, the phone is doing a good job telling the story all things considered. Loved the replay of your son's face after dinner. :laugh: We have one major grocery store that still cuts and packages their own, you can order whole pork legs there, too. Knowing a real butcher is a wonderful ace in this hobby.
