Hey folks,

We've been invited to a neighborhood cocktail party w/ many people who barely know each other at all, hosted by a neighbor I don’t know… yet.

I need something to bring that's finger food and not too messy. I also want the to be all pre-assembled so no on the spot preparation needed.

I’m considering bbq taquitos. Here’s my idea, please let me know what you think, suggestions appreciated as I've not attempted these before.

Smoked pulled pork, mixed w/ caramelized diced onions & peppers, sweet smoky bbq sauce and Mexican taco cheese blend.

Rolled in street taco size corn tortillas & fried to crisp.

BBQ sauce and chipotle ranch on side for dipping.

Your thoughts?

I'd be inclined to try them with and without peppers. Also, might try the next size up tortilla. I might also add sour cream and a good guacamole for dipping.

Sounds like a hit to me! at least I'd be down for 6 or so (dozen).



I've never made taquitos before (but I love to eat them) so I have a question... how do you keep them from unrolling before the tortilla gets crispy?
