BBQ Brethren "South of The Border" Throwdown! (Entries and Quality *CLEAN* Discussion Only)

It seems I just made some of these a few days ago, but don't mind having them again. The primary ingredients in these are corn chips, pulled pork, enchilada sauce, green chiles, cheese. We all know how to make pulled pork. The enchilada sauce came from here:

Not for voting. This is listed in the standard TD rules (link in the OP). You can make multiple dishes, but only one can go to voting.

SPECIAL TD's are the exception. Multiple TD's are allowed in the Special TD's since they last longer.

Believe it or not, some folks out there believe multiple entries give people an advantage. So the way around this is to have the standard weekly TD's only allow one dish per person, but to allow some way for folks to enter multiple dishes it is allowed in SPECIAL TD's.

If that's not not confusing enough for you yet, I can maybe explain it a little more, or perhaps let Moose have a go at explaining it.
