After getting thrashed by Titch in the Big Sammich Throwdown I decided to regroup and go for something a little more basic for the Bacon TD.
It all starts with a pork loin that I brined over night in OJ, brown sugar and kosher salt. I wrapped it in a bacon weave and coated it with a rub consisting of cocoa powder, chili powder and brown sugar...
While it got happy on the UDS I mixed up a BBQ sauce that maintained the flavors used in the rub and brine. I started with a traditional sweet tomato base and added OJ and semi-sweet baking chocolate. Let it cook until the flavors came together...
Pulled the loin when it hit 160* and let it rest...
Here is a slice of the loin atop some of the BBQ sauce...
This totally did not suck. The rich flavor of the pork went really well with the chocolate in the sauce. Much better than I expected and I would definitely make this again.
