I've never tried the foil boat brisket method as I wasn't sure I would like the crunchy bark. Last weekend I was in Austin, TX and decided to go to LeRoy and Lewis as this is where Brad from Chud's BBQ worked. The brisket was perfect. The thin crispy bark had the texture of perfectly cooked fried chicken. It was amazing paired with their Kimchi.
