Did a few racks of slc's today. Put em on at about 11 am, 225° in the smoker with some apple chunks. I didn't wrap them, but I did try spraying the down with a little apple juice a few times during the cook. I don't feel like that really did much of anything, though. Does anybody have any advice or experience with that technique? Also do you wrap your ribs, or not? Only the second time I've done em, and I would appreciate any input.

those are some nice looking ribs. on my uds I started wrapping because the bottoms always got to burnt, even with a heat diffuser plate. Now that I am using my offset I no longer get the burnt bottom so I feel for me there is no need to wrap any longer. I also dont spray or spritz with anything, I toss them on and the lid stays closed until I start checking for done or pictures.
