So every year they do the fireworks in our town on the Saturday before the 4th. We live about half a block from where they fire them off, so for the last 3 years we've had a big. BBQ, then everyone walks down to the park for the show. It grows every year. This year was about 60 people. Next year I'm going to need a monster cooker from Shirley fabrication just to accommodate all the meat.
I had to call in for reinforcements to get this done... Borrowed a wsm from a buddy, and oifmarine lent me his drum (the blue one). Every smoker in this pic saw some action yesterday, plus my kettle
So.. The menu -
Here's 3 packers and 2 butts, rubbed and ready for action.
We served Mac and cheese, cornbread, baked beans, cole slaw, pickles ala marubozo, brisket, burnt ends, pulled pork, and baby back ribs. Everything from scratch, even the sauce. Only thing that was store bought was buns. Yea, it's some work, but so much better!

2 butts went on my drum -
1 briskey on Chris's drum -
And I dusted off the chargriller for ribs. 7 racks worth -
Cooked everything hot and fast, around 300.

Chris's drum is magical, btw. It cooked an 11lb packer in under 4hrs. The other 2 were around 160, I checked his and it was at 198 and probing pretty tender! Never stalled, never wrapped. Pulled it soon after, and I would say it was the best of the 3 packers. Really weird. Same temps, same meat. Just really fast. Others took 4 hours longer.
Pics are lacking toward party time, lots to do, and my hands were always dirty with BBQ. Here's what I have

Here's a shot of the chaos. Seemed like everyone had a good time. The burnt ends and ribs got the most comments, but everything was pretty much gone. Got a little pp and some sides left, that's it. It's a lot of fun, but I'm glad we only do it once a year. Big thanks to ChicagoKP and Oifmarine for all their help. You guys are the best!
