Ever since Jeremy did his double cook on pork carnitas, I have been jonesing to give them a shot. I wanted to do a butt on the Bubba Keg since I had some yard work to do and would be around to watch it.
As I was purchasing the butt, it hit me that I could do carnitas, so a quick look on the phone and I had an easy recipe. The seasoning was salt, pepper, cumin and oregano.
I knew my daughter wouldn't go for them, so I split the butt and did regular BBQ pork for her. Just to keep the butt company and cook lunch for tomorrow, I tossed some 16 Adams bargain bin, marked down short ribs on, as well.
The keg held nicely at 300 for the entire cook and after a brief wrap, the pork was ready.
The carnita bar is open! Everything turned out better than I could have hoped. I think I even impressed my wife.
