Happy Sunday, all! It’s been a busy weekend for me but had to make time to season and cook on the new offset! Many out there are like myself and waiting to see how this new model of offset from Shirley Fabrication performs. As many have stated already, this model is similar to the Workhorse 1975t, but I chose Shirley Fabrication because of their dedication to quality, and this isn’t the first direct flow cooker they’ve ever built..Mr. Paul and the crew in Tuscaloosa did a great job with this cooker and I’m doing this for the challenge of cooking on a direct flow. After cooking on a Lang 84 for the past 10+ years, reverse flow cooking is getting too easy if you can believe that. I was able to get it seasoned with beef tallow last night, and have some ribs on today. I’ll share a temp comparison pic later, too. Sorry this isn’t more detailed because I’m having to post this while my 2 year old is napping and the family is at church!
