This is simple pit beef sandwich. Nothing fancy...just good simple food.

I started with a bottom round about 4lbs and rubbed it with salt, pepper, garlic, onion, and paprika. Let it sit in the fridge for 4 hours, then sit out for 30minutes and onto the grill. I also put on some old bay potatoes wedges.

After a good sear I cooked the beef indirect with the potatoes.
