I have been buying them at Restaurant Depot for a few years. Avg under $2.50 a lb. JennO or butterball brands. They come boxed, 2 breasts per foil pack, 2 packs in box. Avg 18lbs a box. Listed as RTC, ready to cook turkey breast. I call ahead to see if they on stock. Family loves them. Your cook looks great.
I drizzle Costco pure maple syrup and butter mix over them in the last 30 minutes of the cook. Top rack of WSM, no water pan installed.

Like many here, turkey is not my go-to but it makes a great “something different” and this is just top shelf. I’ll go stand by the mailbox if you want to send me a sandwich. [emoji846]

Fan freekin tastic Sako. The whole family loves turkey and we have it throughout the year. Errrr they don't even have a Costco business center in MI. I might have to just break down and get a regular breast and debone it. Two quick questions, did you brine at all and what temp were you rollin?

I like RD too but Costco business is more convenient for me. I'll take a trip there as I like certain things from RD.

Top rack all they way. Till 135 then wrap til 155. Rest 1/2 hr in Cambro unwrapped.

That'll definitely work too. I didn't inject because it already had 15% solution pumped in. I smoked at 275 then bumped to 375 last hour. I wanted to get some smoke in and it was easy since it was poultry and I was using 100% hickory from Lumberjack.
 
Looks good. Not sure exactly why its "central TX style" though. To me it looks like some really good peppered smoked turkey breast.
