Haven't heard of that one. I use the Boiling Water trick.
Has anybody used yogurt to successfully
get bite through skin on chicken thighs?
Never tried yogurt. I always achieved bite through skin by cooking longer. 10lbs chicken quarters at 275 for 3-3.5 hrs. Flip once midway. Tender bite through skin every time.
Do you start with skin up or down?
