Unfortunately, huli huli chick has near disappeared in hawaii. Health dept seemed to have had a cow and stopped all the fund raisers and road side stands. I think a guy in kauai is making a go at it. So hope folks there do a cook for you. Many sites have all sorts of recipes but the original was kept a secret. Mostly its just a very simple mix of common stuff. Then dabbed on as the chicken is rotated thus the name. Glad I lived in hawaii when it was going full blast. Pick up your chicken, go to the beach, enjoy.
 
We're only going to Molokai for a day visit I think? Any must have/do in Maui?

You nailed that chicken, but I would have to taste it to be sure.

Things to eat in Maui:

Iron Imu in Lahaina - BBQ.....nuff said
Star Noodles - Go for the "Bacon and eggs"....You're welcome
Mama's Fish House - Try to get a "beachfront" table.
 
How did you make your Huli Huli marinade?
1 cup pineapple juice
1 lime squeezed
1 cup chicken broth
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup rice vinegar
1/4 cup dark brown sugar, packed
4 tablespoons fresh ginger, skinned and grated fine
2 tablespoons Worcestershire sauce
1 teaspoon dark Asian sesame oil
2 teaspoons Sriracha Sauce
4 medium cloves of garlic, pressed or finely minced
2 green onions sliced
