We started getting our butts from Keith this year. We're no where near the level of a lot of guys who have already commented on this thread, but we have done quite a bit better in both pork and ribs since making the switch. Couldn't be happier.
 
I'm 90% sure I'll be cooking Smithfield extra tenders this weekend at Sams South Bend. After everything I've heard, I figure its worth a try
 
Had last week off work and took a trip to KC to pick up some briskets and butts from Keith. Picked up several Smithfield Prime butts, however when I asked to see the extra tender ones I couldn't resist as Keith pulled out the biggest money muscles I've ever seen. Thanks to Gateway BBQ store I had a stack of coupons for $3 off each butt... Walmart rarely honors those coupons

Walmart always honors the coupons, they just have to be hand keyed in and a CSR has to approve them.:roll:
 
It's like wagyu. Great when you win, but you never hear folks claiming they used them when they bomb.... ;)

If I was competing, I'd order them though!!!
 
Weight of a good slab of ribs

So unfortunately the walmart near me has the worst selection of ribs (usually 2-3 racks)... Of the ribs I do see they appear to be thin and lack that thick meaty rack we all look for.

The usual racks near me are about 3.1-3.3lbs, what are the "good" racks weighing in at?

Some folks will find this hard to believe, but I'm not as worried about the weight, in fact, I've sorted enough and cooked enough Durocs that I look through the cases and pick out the Durocs....really, they have Duroc ribs scattered in with all the others. They might say ET's but you better damn sure bet you can find Durocs in there.:shock:
