Boneless Pork Belly @ Costco help Needed

Today I was shopping at my local Costco and they had boneless pork belly, so I grabbed one. Now what to do with it, any help would be great. I was going to smoke it on my UDS.
 
I saw those the last time I was at Costco. Still have a box of Backwoods Cure that I've been meaning to try.

Maybe next week I'll pick one up and go through the whole thing. A labor of love.

(although I gotta admit, there's a nearby restaurant that sells their bacon that's pretty d..... gosh darn good)

Bacon! Get a half cup of your favourite rub, add a quarter teaspoon of pink curing salt, leave for a week then smoke it until it gets to 150°f internal. When cold, wrap in foil, refrigerate overnight so it's easier to slice in the morning for breakfast!
 
Did gordon ramseys slow roasted pork belly last night. The flavors were great, the wife went back for more. I'd lower the cooking temps or I should have used a bigger chunk of the belly.

Halfway through the meal she asked "is this stuff bad for you" which means she hopes it isn't. Belly is great!
 
Am I the only one who wondered which pork belly is not boneless?

Am I the only one who wondered which pork belly is not boneless?

Bone in pork belly is the pork belly with the spare ribs still attached to it. I have a hard time finding the bone in pork belly's because people love them some ribs so they take them out to sell on their own.

Around here I can almost always find bone in belly at the Asian stores.
