So I decided to do a brisket and pastrami yesterday. Didn't cure the pastrami myself, I cheated. Brisket was one I purchased a while back at Sams Club and threw in the freezer. Just your standard 14 lb Choice brisket.

Beautiful Sunday morning in NC. Was around 29 degrees. Used the 22.5 for this task.

Sorry for the large pictures, they are hosted off Facebook and I didn't bring the originals with me. If I get a chance tonight I'll move them to another site and re-size.

As for the brisket it was good. It was a strange piece of meat, I could slice and hit tender after tender piece. Then the next slice would be tough. Still worked out though. Wife loved the pastrami, said it was as good as Neil's, so I'll take that as a compliment (the woman loved Neil's (bigmista) Pastrami).

Next weekend...the old standby...Pulled Pork! :becky:

Man, that looks good! With beef prices being what they are, I haven't done a brisket in quite awhile. I think it's about time for one!
 
I got lucky, I found that one for about 3.35 /lb. Been right around 7 - 8 /lb. Same reason I haven't done more. If I'm spending that much money on beef, I might as well get a whole beef tenderloin or a whole ribeye.

I've been holding off on briskets at well due to prices. For the $ I'd just as soon do shorties or, like you, ribeye. Plus I'm not as consistent with brisket as those other cuts.

I figured I've been here long enough, might as well start putting up some pron! At least once a week I will do it.

I've been eyeing that chuck roll....that's just a lot of beef to do at one time.
 
Looks like you smoke close enough to attract the neighbors!

Yea this is the hardest part of our recent move back to NC. Went from a dead end road on top of a hill to a neighborhood. Hoping it's only for a year or two max. Nothing wrong with neighborhoods, I'm just not made for them! :-D
