Brisket Cook (Lots of Pics)

Looks fantastic! Every time I cook a packer, I look at the pile of trimmings and shed a tear:cry: I live well out in the country, so put the trimmings near the trash burn barrel and the local Possums have a feast. Even have a Coyote or two brave enough to sneak in for a bite.
I often put a trail camera out just to see what shows up

I cut my trimmings into cubes, put in a pan on med. heat and render the tallow. It is the best for frying anything. I usually get about a pint of tallow per brisket. Unless you just want to use it for opposum or coyote bait?

Looks perfect and thanks for the inspiration! I'm cooking 5@15 choice packers (75# total) on Tuesday for a cattlemen's dinner (it ain't like I can cook chicken or butts):becky:
 
Good looking brisket Guido -only thing.. it looks lonely on that cooker all by itself...
 
When cooking at home we get our Briskets at Rest Depot on Secaucus Road.
Sometimes I'll pick them up at the RD in Hackensack.

I had no idea there was one that close to me, I always went to So Hackensack.
