Quick weeknight meal

quick easy weeknight meal. took a pork tenderloin, and marinated in a mixture of bourbon, maple syrup, diced onions and chopped garlic.

threw it on the kettle for some indirect treatment.

meanwhile, took the leftover marinade for a spin in the Ninja

then added some mustard powder, a bit more maple syrup, and reduced it down

glazed it with the reduced marinade at the end

topped it with more of the reduction, and served it up with some sweet corn I had thrown on the grill with the pork (no pic on that)

came out good...nice easy weeknight meal :thumb:

Thanks Jeanie...glaze was good. I might go a little lighter on the onion next time, though.

Love those things.....just right for tender & they take rub, marinade, injection really well.....nice sauce.....wondering if the mustard powder made it real tart....had a few bad experiences as a child with that stuff..............

Good, very simple food. You can do that any day in the summer. Lean, healthy, and really good food. :thumb:

nope...not especially tart. The bourbon and maple dominated the flavor up front, and the garlic and onion mostly in the background.
