First batch of chicken out of the smoker.
Wood is a challenge to use. Had to dampen the air flow to keep the temp down.




 
Looks good so far. Try using smaller pieces of wood for the fire to control the temp. If you choke the damper down too much, it will smolder and give you dirty smoke.
 
The sirloin:
The good - very succulent. Tender medium rare all the way.
The bad - I should have seared it longer. Didn't get the crust good enough. I was worried too much about the inside. I'll do better next time.
The chicken thais and drumsticks were delicious. I could taste the juice inside. Very moist and tasty.

Looking good Definitely sear that steak longer Try brining the chicken I use thirdeyes brine recipe from his blog- really good with chicken and pork chops I add some honey to the brine and I use the lite brine as I am a little sensitive to salt
The food tasted good and that is what is ultimately important
