Hi all-

I've been more intrigued by stick burners and I primarily cook chicken, and one day Smoke Ninja suggested I consider the 007 as a great way to cook my chickens.

Seemed to offer enough design that it might do something a little different, and I had the recommendation of Ninja Steve so what the heck.

So some thoughts on this rig- What is happening here isn't as straightforward as it seems (to me, anyways). This has been a real eye opener.

Firstly, this was what I was looking for. Stick burner and I like the flavor vs lump on my BGE.

Secondly, the Infrared radiation is evident in this cooker. My indirect cooking on the BGE lost this. Maillard Reaction city. Wow.

The smoke exiting under the grill really makes for a great level of smoke. This seems like a minor thing, but it isn't for reasons I'm still learning about.

The tall drum (compared to open air pits) channels the heat and IR up to the grill.

I'm still learning but so far I am thrilled with this 007.
 
First nice build! It is FIRST CLASS workmanship!

The smoke exiting below the cook grate is very beneficial ...one it's such a large exhaust area which allows for clean complete combustion, cleaner smoke/better food. There's not the airflow over the meat as with other cookers so it tends to keep the food more moist but it still gets all the heat and flooded with clean smoke... and the slow searing action from the infrared does amazing things to the outside of the meats, Poultry skin loves it!

A real fire puts off a ton of IR but with the distance from the fire you don't get the unwanted charring and burning.

Wait till you get the rotisserie setup, it's pretty nice to be able to roti in an enclosed area and still cook in the swivel area up above. Before I came up with the 007 it was just the rotisserie barrel over the split fire and one of the first cooks using it I was at a friends lake and we had 40mph sustained winds coming off the lake....It didn't affect the cook at all!! The rotisserie chicken was still chugging along in the 300-350* range. Try that with a open fire system.
 
I was shocked that in the high wind the chicken still cooked. The IR is like a flashlight- wind doesn't affect it.
 
Besides the ability to go up or down the swivel is pretty sweet because it is nice for things like swing off to access the rotisserie food below, swing off to stir food or temp meat, and even use in offset mode by swinging off and using the exhaust on the kettle lid to pull the smoke/heat over the food indirect.

For you having a door and the upper grate it's another benefit to access that easily....and in my case to feed the fire. I will get the lava lock eventually, I dig it!
 
Being able to move the grate up and down is nice, but you're cooking mostly at that one height. The ability to swing it away from the drum for whatever reason is really great.
 
I figured there were four missing ones by the little grey circles with the line through them. Mention of a cook in the descriptions.
