My family has decided to do a Mexican themed Christmas this year and I have volunteered to bring the smoked meat for tacos and burritos or what not. I figured I would smoke the meat this weekend and then freeze and thaw and heat in crockpots for Christmas dinner. I have one of those long cryovaced pork loins and some chuckies Iām going to shred. I will be smoking in my two weber kettles using the snake method. Any suggestions for rubs and cooking methods?
